Dairy industry has an important role to play in the global food system, and the
change in consumer lifestyle has resulted in an increase in demand for dairy
products across the globe. This change in the consumption pattern has resulted in
boosting the scope and intensity of the global dairy trade. Industries across the
globe face strategic challenges because of globalization and so does the dairy
industry. Although the countries in South Asia largely rely on dairy farming for
their livelihood, and India is the world leader in milk production, the industry is
highly unorganized and primarily managed as family businesses. Being mostly
family managed, the Indian farmers ensure low cost in production, making their
produce competitive in the global market. Barring a few national players, such as,
Amul and Mother Dairy, the industry is highly informal and there is scope of
multifold improvement. In light of the new competitive environment, where
companies such as Dannone have made inroad to India, and the world market
being open for Indian products, this book provides an insight on the sector from
the global perspective.
This book has 12 chapters, starting from providing insights on world dairy
trade to description of Indian dairy industry, followed by providing information
about the dairy sector of USA, New Zealand and China. The first chapter provides
the background of the dairy industry, highlighting India’s contribution in the global
production and how globalization has impacted agriculture in the country. The
